Got an i-Pace for a week now.

Carplay worked like a breeze.. until yesterday.

Now I get 'Carplay not avaialble' message when connecting.
What I tried:
- switching on and off
- reconnect bluetooth
- re-pair bluetooth
- different cable
- disabling carplay on iphone
- selecting incontrol apps (hence disabling carplay) in ipace

Anyone any clue?

If that happens, disconnect the iPhone from the cable. Unlock the iPhone and reconnect while unlocked. Might help. I had this once. The iPhone was in the state where it requires me to type my code to unlock, instead of using face ID (a thing it does automatically every some days).

Switching to a "genuine" Apple cable resolved this issue for me.

Same problem here. Sometimes it works straight away, sometimes it takes a minute or so and sometimes it doesn't work at all. I just spent £19 at the Apple shop thinking my lead may be faulty but the problem hasn't cleared up. Saying that every car I've owned since the advent of phone pairing has had issues of a similar nature. Frustrating.
